Pot Liquor or Potlikker?
Whichever term you prefer, it’s still a pretty darn good thing. And apparently it’s very good for you as well! Sadly the collard greens are finally exhausted, but the potlikker left over is plentiful. Tonight I faux-steamed baby carrots in it: pop about 8-10 baby carrots in a bowl, fill with liquid to a little shy of covering, and nuke for 60-90 seconds depending. I usually do it with water for a quick snack or side dish, but tonight’s was inspired and delicious. I’m not sure what else to do with the liquid, but I’ll hold onto it for another day or so.
If the weather holds tomorrow, I hope I can get out to the shops and pick up ingredients to make that sweet potato cheesecake, however tomorrow night is both “Heroes” and “The Closer” so maybe I best wait ’til Tuesday (Hush, hush. Keep it down now. Voices carry…) to get to baking. It’s been a pretty light month for me and cooking, so it’ll be nice to get in the kitchen for some goodies, and I really must find some places to head out to eat this month. Maybe taking advantage of restaurants having a “table in the back” while they’re full up with groups trying to do holiday dinners. Oh and anyone that’s invited to a great company holiday party? Someplace with good nibbles and an open bar? You know who to call.
